Almond Tofu

Ingredients:  

3 tablespoons gelatin or agar powder 
3 Tablespoons granulated sugar  
1 quart soy milk  

1 tablespoon almond extract 
4 Chinese or other dates, pitted and diced

Add gelatin to one cup warm water, stir, and set aside for ten minutes. Add sugar, soymilk, and almond extract to the gelatin mixture and stir well. Simmer for five minutes, then pour into six glasses or dessert dishes. Cool, cover, and refrigerate until set. Serves 6.
