Consistency. I wish more chefs could have their own resources to open their own places, rather than depending on an investor. I can have an absolutely wonderful meal one day and a completely different experience the next, all at the same place ordering the same dishes. Many restaurateurs hire a skilled chef only for a short time, and change staff after their business has picked up in order to save money.
