And the way to recruit Asian-Americans, Lee says, is no different from recruiting workers in general: through connections, networking efforts and word-of-mouth. He suggests spreading the word through local and national Asian-American organizations, Asian-American newspapers and magazines -- English and foreign language -- and community job fairs. But don't overlook one of the most convenient resources: the restaurant staff itself. Happy employees, Lee says, are effective recruiters.
